    Shredded Hoisin Chicken Wraps

    I shared a photo of these Chicken Wraps on my Instagram stories last night and had SO many people message to ask for the recipe so I thought I’d share it here for you to enjoy too! Apologies for the lack of photos but I wasn’t expecting to share it as a post. I will definitely be making it again though so will add some more photos then!

    The recipe came from our Gousto box this week. We used to do these a while back but then stopped after Hugo was born but have started again as we’d got stuck in a bit of a rut with meals.

    This is our third meal from this box and we have loved every single one so far! The kids have been really enjoying them too. These Shredded Hoisin Chicken Wraps were so quick and easy to whip up. The perfect Saturday night dinner and much cheaper than a takeaway!

    Ingredients (Serves 2, double all ingredients for 4)

    • 1/2 a cucumber
    • 2 spring onions
    • 6 small tortilla wraps
    • 1 red gem lettuce
    • 320g skinless and boneless chicken thighs (you could use breast if you prefer)
    • 40g hoisin sauce
    • 15ml soy sauce
    • 5g sesame seeds

    Method

    1. Heat a large wide based pan (preferably a non stick one with a lid) over a high heat. Once hot add the chicken thighs to the pan with a pinch of salt and cook for 2 minutes on each side until golden. Once golden, reduce the heat to low, add a couple of splashes of water to the pan and cook, covered with the lid, for 10-12 minutes.
    2. Meanwhile shred the lettuce. Cut the cucumber into discs and then slice each disc into matchsticks. Trim the spring onions and slice them lengthways until you have thin strips.
    1. Once the chicken is cooked, transfer it to a clean chopping board and shred it apart using two forks.
    2. Return the chicken to the pan and add the hoisin sauce and soy sauce. Cook for 2 minutes until warmed through.
    3. Place your wraps on a plate and heat in the microwave for around 30 seconds.
    4. Enjoy your wraps filled with the shredded lettuce, spring onion, cucumber and hoisin chicken. Finish off by sprinkling the sesame seeds into your filled wraps! Now, tuck in!

    Toddler Friendly Tuna & Sweetcorn Fritters

    I have been meaning to share this recipe for my Tuna fritters for months now as it’s one that I end up cooking most weeks. I first got the idea from one of the Joe Wickes Lean In 15 books but I have adapted it slightly. Josh and I quite often have them on their own or with a side salad for work day lunches. But they have also been a big hit with Bella too! She enjoys having a couple for dinner with some pasta and a side of veggies. Bella is actually a big fan of fish and probably prefers it to meat!  If you cut them into fingers they would be a fantastic finger food for Baby Led Weaning too!

    These Fritters are super quick and easy to whip up and perfect to make with little ones. I love getting Bella involved in the kitchen and she loves tipping the ingredients into the bowl and mixing it all up with her mini spatula. The fritters taste delicious when eaten hot or cold. They will also last in an airtight container in the fridge for a few days.

    Ingredients (Makes 12)

    • Two tins of tuna, drained
    • One large tin of sweetcorn in water
    • Two eggs
    • 3tbsps of flour
    • 40g grated cheddar cheese or crumbled feta (optional)
    • Coconut oil to cook

    Method

    1. In a bowl mix together the tuna, sweetcorn (water too) and eggs. Add in the flour followed by the grated cheese. Season the mixture with some salt and pepper. If needed you can add a splash of water to loosen the mix if its too thick.
    2. Spoon little mounds of the mixture into a hot non stick frying pan with a little coconut oil. Fry on a medium to high heat for a few minutes each side before flipping. The fritters should be slightly browned on both sides.
    3. Serve the fritters with some sweet chilli or soy sauce for dipping. ENJOY.

    Pork & Apple Burgers

    This is the second time I have made this recipe and it is honestly SO BLOODY GOOD. Not only do these burgers taste amazing they are also really simple and quick to make as they only contain 3 ingredients and they are Slimming World friendly! Definitely one of our new favourites.

    Ingredients for 2 burgers (1 Syn per burger for the cooked apple on SW)

    • 250g of 5% fat pork mince
    • 1 medium apple
    • 1/4 tsp of dried rosemary or a couple of fresh sprigs

    Method

    1. Peel your apple and coarsely grate using a cheese grater
    2. Using your hands squeeze the grated apple together to remove the juice as otherwise it will make the mixture to wet
    3. Combine the pork mince, grated apple and rosemary together in a bowl and season with salt & pepper
    4. Split the mix in half using your hands and make two equal patties
    5. Spritz a good non stick frying pan with some frylight (or use a few drops of olive oil) and fry your burgers on a medium to high heat for about 5 minutes on each side or until cooked through. Serve!

    I served mine topped with 1 tbsp of tomato chutney, home made Slimming World chips which are simply skin on potatoes cut into wedges, spritzed with fry light and cooked in the Actifry for about 3o minutes and lots of salad! These burgers would also be amazing topped with cheese in a nice soft brioche bun 😉
