    Cheats Lemon & Raspberry Tarts

    If you aren’t a confident baker but still want to make an impressive looking dessert then this recipe is for you, my friend! The combination of fresh raspberries with the zesty lemon goes together beautifully and these tarts make the perfect pud to serve at a BBQ as an alternative to a chocolate dessert. The tarts take just minutes to make, they look amazing on the plate and of course taste absolutely divine – you really can’t go wrong!

    This recipe makes two larger tarts but feel free to make individual sized ones or alternatively you can use miniature cases to make the cutest little bite size sweet canapés!


    • 1 x 500g tub of mascarpone cheese
    • 1 x Jar of lemon curd (I use the cheapest one I can find normally)
    • 2 x 195g sweet pastry cases
    • Fresh raspberries to decorate
    • Icing sugar for dusting
    1. In a large bowl mix the mascarpone cheese slightly to loosen and add in the lemon curd a few spoonfuls at a time until your happy with the flavour. I normally add the whole jar as I like it quite lemony but it really is personal preference. Stir until thoroughly combined although try not to over mix as it could go too runny. If the mixture appears to go lumpy then give it a quick whisk using a hand whisk and this should get rid of any lumps.
    2. Spoon the filling into the pastry cases and top with fresh raspberries and pop into the fridge to firm up until you are ready to serve.
    3. When you are ready, dust the tarts with a little icing sugar and serve with either vanilla ice cream or a drizzle of cream.
    4. Enjoy!

    Pork & Apple Burgers

    This is the second time I have made this recipe and it is honestly SO BLOODY GOOD. Not only do these burgers taste amazing they are also really simple and quick to make as they only contain 3 ingredients and they are Slimming World friendly! Definitely one of our new favourites.

    Ingredients for 2 burgers (1 Syn per burger for the cooked apple on SW)

    • 250g of 5% fat pork mince
    • 1 medium apple
    • 1/4 tsp of dried rosemary or a couple of fresh sprigs


    1. Peel your apple and coarsely grate using a cheese grater
    2. Using your hands squeeze the grated apple together to remove the juice as otherwise it will make the mixture to wet
    3. Combine the pork mince, grated apple and rosemary together in a bowl and season with salt & pepper
    4. Split the mix in half using your hands and make two equal patties
    5. Spritz a good non stick frying pan with some frylight (or use a few drops of olive oil) and fry your burgers on a medium to high heat for about 5 minutes on each side or until cooked through. Serve!

    I served mine topped with 1 tbsp of tomato chutney, home made Slimming World chips which are simply skin on potatoes cut into wedges, spritzed with fry light and cooked in the Actifry for about 3o minutes and lots of salad! These burgers would also be amazing topped with cheese in a nice soft brioche bun 😉
